Willamette Provisions is a boutique portfolio of hospitality ventures owned by Shaun Kajiwara and Katie Jackson of Jackson Family Wines. Current businesses include The Tributary Hotel, a Relais & Chateaux property; Okta Restaurant, a joint venture with two-star Michelin Chef Matthew Lightner; a regenerative farm with koji fermentation lab; a forthcoming Willamette Valley vineyard; and a new food and beverage venue coming to McMinville in spring 2024.
The company first retained us to audit Okta Restaurant—operationally and financially—following up with strategic advice about opportunities for improving margins and accelerating growth in the right manner. We also supported the team’s vision for a new F&B venture by providing concept development, capital budget estimates and pro forma operational forecasts.
